High Temperatures - HOT HOT HOT is the answer!
Any meat can be cooked on a grill but with so many cuts of beef available, how do you know which one will suit you and how long do you need to cook it for?
The answer depends very much on each person’s preference. Some like thick, fatty cuts, other like lean thin cuts that can be cooked quickly and served fast, especially for large barbeque gatherings but everyone has their own level of temperature and length of time that they prefer e.g. rare, medium rare or well done.
If you’re looking for a quick, easy steak to barbeque, then Rib-eye, Sirloin or T-Bone can be good choices as they are tender and tasty but bear in mind that meat containing bone does require a longer cooking time, but the reward is a lot more flavour in your steak. If it’s a low-fat cut of meat you seek, then a tenderloin steak (also known as the fillet) has very little fat and is lean and tender just as its name suggests, but the tender loin can lack the flavour that a steak with fat or bone would have. Rib-eye taken from the rib section, has soft muscle and a fat marbling effect that provides lots of flavour and moisture and is great for cooking fast and at high temperatures. Sirloin comes from the back part of the cow, is thick and has a strong flavour, it is a popular steak for bbqs as it is great for marinading and best cooked at a high temperature. Most good steaks though don’t require much other than salt and pepper!
1. Take the steak out of the fridge, cover it and let it reach room temperature.
2. Season with salt and little pepper.
3. Temperature is very important – ensure you have a hot grill
4. Use a good meat thermometer to ensure your meat is cooked at the correct temperature and cooked just right.
5. Brush your steaks with olive oil.
6. Ensure your BBQ grill is smokey hot. High temperatures are best for cooking steaks.
7. Cook steaks until golden and slightly charred. Then turn over and cook the same the other side.
8. The length of cooking time depends on the thickness of your steak and what your preference is. For a standard sized
steak, the following tips may help when choosing how long to cook your steak. Cook on both sides for approximately
2 mins for rare, 3 mins for medium rare and 4 mins for well done.
9. Don’t forget to use your thermometer regularly to ensure your steak is cooking at the correct temperature.
10. Leave to rest for approximately 5 minutes before consuming.
